Erawan Glutinous Rice Flour is also known as sweet rice flour or sweet rice powder, this flour is made from short-grain glutinous rice that becomes moist, firm and sticky when cooked. This makes it ideal for sweeter style dumplings, steam Chinese New Year Cake (Niangao) and Baked Chinese New Year (Niangao). For Steam Chinese New Year (Niangao): Pour 1 cup of water and 1 cup dark brown sugar in the pot. Cook over low heat to make (about 2cups of)sugar syrup. Leave to cool. Sieve 400g glutinous rice flour into a big bowl. Pour in cooled sugar syrup in several additions. Mix well to make batter. add 1/2 tablespoon of oil. Mix well. Pour the mixture in a greased cake pan. Steam for 40 minutes and serve. For baked NianGao: Combine 1 package of glutinous rice flour, 1 1/2 brown sugar, and 1 tablespoon baking powder in a bowl. Add 3eggs, 1/2 cup oil, and 1 can coconut milk(400ml) mix well then pour the batter into the 9x13 baking dish. Bake at 350F for 55minues to one hour. Cool and serve.
